I walked by Loving Cup (a fab rice pudding shop) the other day and decided it was time to start making my healthier version. You start with a can of coconut milk and pour it into a small sauce pan. Fill the coconut milk can halfway up with quinoa and add it to the saucepan. Add a few shakes (half teaspoon) of cardamom, cinnamon, and vanilla and let it sit together overnight. When you wake up in the morning bring it all to a boil and then turn it down to a simmer and let it bubble away until cooked/soft, about 10-15 minutes. You can drizzle a little tea cup full with honey or add some dried coconut flakes. Mmm.
